Our succulent catering services are provided by our resident gourmet chef to ensure you and your guests enjoy a winning combination of fabulous food, exceptional presentation and first-class service.

Selection of five (5) passed hors d’oeuvres (unlimited quantities) during cocktail service.

  • Quartered head of Romaine lettuce tossed with herbs, Parmesan crisps, a pancettamedallion, croutons, and lightly dressed with an anchovy-egg emulsion plus a garlicky drizzle.

  • Ripened tomatoes, fresh basil, and buffalo mozzarella, topped with an olive oil & balsamic reduction. (v, gf)

  • Kale, red cabbage & mango with honey lemon vinaigrette topped with toasted coconut bacon. (v, gf)

of the following:

  • Velvet artichoke topped with mascarpone cheese and chives. (gf)

  • Maritime lobster bisque with blackened baby shrimps & truffle oil.

  • Butternut squash with coconut milk served with crème fraiche and maple syrup. (v, gf)


Main Course

You may offer your guests, in advance, two (2) meat choices, and one (1) vegetarian choice from the following:

    Free-range bison tenderloin seared and served with a creamy artichoke risotto & jus

  • Dry aged 6 oz reserve beef tenderloin, with smokey mashed potatoes, beetroot purée & a vanilla jus.

  • Mariposa Farms duck confit served with a cedarcitrus gastrique, butter poached fingerling
    potatoes, and pumpkin seed kale pesto.

  • Seared organic salmon served with a mapleorange beurre blanc & lemon herbed wild rice

  • Marinated oven-roasted chicken breast stuffed with select cheeses & sun-dried tomato with caramelized yellow flesh potatoes.

Vegetarian & Vegan


  • Vegan aubergine cannelloni. (v)

  • Steamed leek dumplings and a vegetable masala medley, drizzled with a garlic-mint yogurt. (v)

Late Night Chef Hosted Culinary Stations

Authentic Canadian poutine made with Yukon gold fries St. Albert cheese curds, gravy, and choice of Montreal smoked meat, pulled pork, and sautéed vegetable.


Fabulous Firenze Antipasto

Antipasto including mortadella, prosciutto, salami, spicy capicola, mozzarella, long green pepper, black & green olives, roasted red peppers, parmigiano reggiano, sliced focaccia.

Taiwanese Steam Buns

Piping hot gua bao steam buns with choice of BBQ pork belly, chicken, or pulled jackfruit, topped with veggies and traditional sauces.

Champs-Élysées Crêpes

Sweet & savoury crêpes with assorted variety of sweet & savoury fillings and sauces.

Mariachi Bar

Mexican chicken & beef tortillas with traditional garnishes & habanero sauce.


Pizza Party

Choose three of our chefs’ fabulous gourmet pizza creations, served with your choice of classic dips, and a fresh side salad.

Caribbean Cookout

Caribbean jerk chicken, rice and peas, grilled pineapple with a maple glaze.
